Stuffed Peppers - Eating with Liz 2013

Yum! Stuffed green peppers.

Filling:
6 oz chicken precooked.
1 carrot.
1 celery stalk.
1/2 onion chopped.
Some chicken broth to keep moist.
all sauteed together with some olive oil until soft.
add 1 cup quinoa cooked.
Stuff two good size green peppers.
Bake 30 minutes @ 350° until peppers are soft.

Eat. makes 2.
Easily multiplied for more.


Yes. I improvised the entire recipe.

John added Parmesan cheese and soy sauce. But it is good without.
