Yesterday was Fat Tuesday. Although we are not catholic, nor do we actually celebrate Mardi Gras we decided that some good old comfort wouldn't go amiss... This is what I threw together last night.
Liz's Jambalaya1 Onion chopped1/2 Green Bell Pepper chopped1/2 Red Bell Pepper chopped3 Celery Ribs chopped1 lb Smoked Sausage cut up1/2 Rotisserie Chicken cut up1 box Zateran's Jambalaya Rice2 1/2 cups WaterThrow first 5 ingredients into a dutch oven or large pot. Cook over medium heat for 10 minutes to soften veggies and heat the meat. Pour in rice mix and water. Bring to a boil. Reduce heat and cover. Simmer for 25 minutes or until the liquid is almost gone.Serve it up. Yum!!Makes about 6 servings.
